Introduction

Levi and Maria's Cooking Journal is a Bi-weekly Internet Cooking News Publication from the LMT Chinese Cooking School, located in Montreal, Quebec, Canada. Levi and Maria are the founders and directors of the LMT Chinese Cooking School since 1992, which has been showcased in The Gazette Living Section on January 28, 1998. Both of them are Chinese Chefs with more than 30 years experience in teaching Chinese Cooking, and more than hundreds of traditional Chinese Dishes have been taught, including Cantonese, Szechwan, Shanghai, Peking, Chinese Dim Sum, Chinese Vegetarian and Chinese Herbal Cooking. Students who have attended the cooking course are able to master and cook delicious Chinese cuisine.

Based on over 30 years of experiences from true Culinary Chefs in Hong Kong, This is a bi-weekly cooking journal, in which a lot of unique articles about Chinese food culture, Chinese cooking techniques and ingredients are reported. Recipes in Each Issue

In each issue, we introduce two famous Chinese dishes and their recipes. Our recipes are not the same as those you can easily download from the internet, or those from the cookbook which you can find in the market. Our recipes are based on the lecture notes which we use to teach at the LMT Chinese Cooking School, and are based on our years of cooking experience. They are written so that our readers can easily grasp the techniques behind Chinese cooking to prepare delicious delights for their familes and friends.
